Gluten-free pizza dough

  1. Pour the rice flour, potato flour and locust bean gum into a larger bowl, mix and make a small well in the middle.
  2. Crumble the yeast into the cavity and pour the lukewarm water over it. Lightly whisk together the yeast and water with a fork.
  3. Also add sugar to the well and stir in a little flour from the edge.
  4. Add salt and olive oil and knead all ingredients into a smooth dough.
  5. Roll out the dough immediately - preferably on a piece of baking paper - as thin as possible and pull the dough with the paper onto a baking tray. Let the dough rise on the baking tray in a warm place.
  6. Top the pizza to taste.
  7. Bake the topped pizza in the preheated oven (230 °C top/bottom heat) on the lowest rack for about 12 minutes.
