Gelatin-free jam

  1. Heat the fruit, honey and lemon juice together in the pot, but do not boil yet.
  2. Then puree.
  3. Dissolve locust bean gum in 250ml cold water.
  4. Add the dissolved locust bean gum to the rest and bring to the boil for 3 minutes, stirring constantly.
  5. Rinse the jam jars with hot water, pour in the jam, close tightly and turn them upside down to cool.

Tip : For the best results, you can use a hand blender to dissolve the locust bean gum in the cold water.
