- Heat the fruit, honey and lemon juice together in the pot, but do not boil yet.
- Then puree.
- Dissolve locust bean gum in 250ml cold water.
- Add the dissolved locust bean gum to the rest and bring to the boil for 3 minutes, stirring constantly.
- Rinse the jam jars with hot water, pour in the jam, close tightly and turn them upside down to cool.
Tip : For the best results, you can use a hand blender to dissolve the locust bean gum in the cold water.
